This is the first step towards realizing our dream of producing “virgin” wines.
PURO is created from 100% Sangiovese grapes, vinified in stainless steel and without added sulfites. Sulphur, as an antioxidant and antibacterial agent, is replaced with physical and non-chemical means, such as low storage temperatures, frequent dissolved oxygen inspections and appropriate filtration to ensure the wine remains microbiologically pure.
- Vineyard : Southern exposure
- Harvest : Hand-picked in crates by the end of September.
- Vinification : Soft destemming of the grapes. Natural fermentation and maceration with indigenous yeasts at controlled temperature in stainless steel for about 8 days. After malolactic fermentation, which starts relatively quickly due to the absence of sulphites, the wine is decanted and stored at a temperature of 10° C.
- Maturation : In stainless steel tanks for 6 months. The wine is then bottled to maintain its integrity and freshness.
- Grape varieties : Sangiovese
- Alcohol content : 13% – 13,5%
- Tasting notes : Intense and brilliant purple colour. Young aromas of freshly pressed blackberry, strawberry and violet. On the palate it is fresh, juicy and crisp, a real explosion of fruit with clear notes of cherry. The finish has a good persistence.
- Pairing : The style is reminiscent of a novello, but with the difference that Puro is totally natural, making it an easy drinking and immediately accessible wine, which goes perfectly with all dishes, from starters to dessert. With chocolate it is divine!
- Serving temperature : 16° – 18°C in winter – 12° in summer
